Hello!
I am Maggie Noble and my husband, Matt and I restored, own and operate The Tavern on the Square in New Wilmington, Pennsylvania. We’re a couple of chefs who like to fix things. We are forever restoring our 1895 home and raising three kids on top of it all. I started this journal well before the plot twist of becoming a restaurateur, as a way to connect with other moms and strengthen skills as homemakers but the noble home has evolved into a space to record our Tavern stories & family recipes and whatever else that sticks to the wall in this crazy season. This method is tried and true. The most delicious and flavorful and moist bird you’re ever gonna make! We pick-up ours from a local friend/farmer, Chuck Moose and think that the good raisin’ is part of that fantastic finished product.
Winter squash soup is a smell you want to come home to. I was able to source almost all of these ingredients from Amish and organic farms from within a few miles from my house here in Pennsylvania at the end of September. Herbs are important here so if you’re growing your own, you’re in good shape because the more the merrier!
