Easy Summer Tomato Sauce
Oven-Roasted Goodness
These tomatoes came straight off the vine and into the baking dish. 1 hour later…sauce ( and the oven did all the work)!

Ingredients:
2 pounds of garden tomatoes
1 onion (red, white, shallots…whatever you’ve got)
6 cloves garlic ( peeled, root off and smashed)
Olive oil (to drizzle)
Salt
Sugar
Method:
Preheat oven to 425F
Core the tomatoes by inserting the tip of a pairing knife next to the stem and carefully slicing in a circle until the stem pops out.
Arrange cut side up in a baking dish.
Add smashed garlic.
Add sliced onion.
Drizzle with olive oil to coat the product.
Season with salt and pepper.
Roast uncovered for 45 minutes to one hour ( you need so see the tomatoes breaking down a bit. Tip of a knife should slide in easily).
Slide into the hopper of a blender or use a food processor to blend to your desired chunkiness. We like it pretty smooth but if you do like some tomato chunks, hold some of whole tomatoes back and give them a smash in the baking dish and stir into the blended sauce during the next step.
Pour into a sauce pot and bring to a boil ( this removes any possible contamination).
Season with more salt if needed and 1 to 2 Tablespoons of sugar ( make sure to taste first! You might like it as it is).
Enjoy!
